You call them British. They might be preferred to be called Scottish if they come from Scotland, English is they are from England, Irish if they are from N. Ireland and Welsh if they are from Wales.

Scotland (also Wales and Northern Ireland) did compete in the beijing Olympic Games. They competed under "The United Kingdom" rather than their individual countries, because they are all from the same "piece of land" which is known as "The united Kingdom". (Even this title is shortened)
