I do indeed know about this recipe! It's a simple recipe really. Make your dressing as usual. When cooking your onions and celery add 3 oz (assuming you are using about 6 cups of cubed bread) of dry, chopped, fresh oysters the last 5 minutes of cooking. Save the liquid the oysters came in and use it as part of the liquid you add to your usual dressing recipe. Make this immediately before cooking and store carefully. On a side note I'm 56 years old and this dressing was served at every Thanksgiving ever since I can remember! Oddly enough when I went to my first Thanksgiving at my husband's family (we were married 2 years ago) Oyster dressing was also a staple of their Thanksgiving! It seems that Oyster Dressing was most popular in the early 1900's. Harry Truman served Oyster Dressing at the White House Thanksgiving dinner in 1949. Typically this dish was popular in New England, most likely due to the availability of fresh Oysters.
A twist on a Thanksgiving favorite, try Pumpkin Cheesecake. See the link below for the recipe!
