The coast and rivers provide crab and salmon, central and eastern Oregon have cattle ranching areas, the Willamette Valley grows a wide range of produce, fruit, and is a world class wine region. There is wheat farming in North central and Eastern Oregon, and there are specialty crops like Hazelnuts and Marion Berries. Oh, and the cheeses too, the Oregon coast has some great dairy areas.
If I was cooking dinner for someone and wanted to show off the local food I would probably start with a local tomato and goat cheese salad, the entree would be baked salmon with local asparagus and some freshly baked bread, and dessert would be an Umpqua Valley Ice Cream with a cherry sauce (cherries from the orchards in the Columbia River Gorge)
