If the oil used to deep fry the potatoes has been previously used to for such things as fried chicken or chicken nuggets or chicken strips then the french fries are not vegan. This is because the chicken fat melts into the cooking oil which then soaks into the french fries and over a short period of time the oil becomes very full of animal fat. One safe place for vegan fast food french fries is In and Out Burger because their oil is only used to make fries. (there is no fried chicken on their menu) Sometimes sugar is used to flavor fries(?!); white sugar may have been processed with animal bones, so avoid sugar if you are vegan. Always check ingredients! Ingredient disclosure is required by law!
"French fries" is an Americanism, and no one knows who first used the term. In Britain they are called chips. What the British call crisps are called potato chips by the Americans. The French call French fries pommes de frits, i.e. fried potatoes.
Many oils can be used for making french fries. While most places use vegetable oil or canola oil, krill oil can be used as well. You can ask your favorite restaurant what type of oil they use.
