You need to open the pdf in a program such as Adobe Illustrator or Photoshop. Usually when you open a pdf it is in adobe reader. The reader program is only for looking at a file and can't edit it. If the pdf file you need to re-color was created in Illustrator and the images are vector, they will be easy to re-color
You can save from Photoshop in many formats like JPEG, PNG, TIFF, PDF. Difference is because TIFF can save layers, PDF can save vector data while JPEG and PNG can save only flat image or only pixels. There are and many other formats to save or export image from Photoshop but usually people work and save all their images in PSD format because this format supports all Photoshop capabilities and can keep most of them as editable. Off course when you need image for Web you will save it usually as JPEG to post it but keep original always and my advise is to keep it in PSD format on your computer.
I always use PDF when printing out work, especially graphics from Photoshop, Illustrator, or InDesign. Mainly because it is a universal format and it will be sure to print the way you need it.
Adobe is a company name and has many different products (photoshop, dreamweaver, Acrobat and so on). To open pdf you have to have Adobe Acrobat Reader which is free or Adobe Acrobat Pro which is not free.

I think we need to discsuss a few basics here... The file format that is originally photoshop is a .psd However, you can export as a jpg, gif, eps, pdf, and several more... if you want to learn more about Photoshop I'd recommend some classes over at xTrain.com
You mean contact sheet or what? contact sheet you can make inside Photoshop and then print it or save as Photoshop PDF. Contact sheet you can also make from Bridge just go to OUTPUT panel. Another thing you can do is to stack images from Bridge and then zip them for emailing.
PSD is native Photoshop format and supports most of Photoshop editing capabilities. You can send to some (not to all) printing companies PSD files. Otherwise save file for printing purpose as PDF or TIFF.
Adobe Acrobat Pro OR Adobe LiveCycle Designer are the 2 programs that modify PDF documents. Nearly all Adobe programs use the PDF format however. Photoshop and Illustrator both utilize PDF, but I'm pretty sure you are referring to editing fillable documents.
