All-Purpose Brine

Makes 1 quart. Can be used for meats and poultry.

Ingredients:

1 tablespoon black peppercorns
2 sprigs fresh thyme
3 bay leaves
4 -6 cloves garlic, sliced
4 cups water
1/2 cup light brown sugar, packed
1/2 cup kosher salt

Procedure:


  • Stir ingredients together in a saucepan and bring to a boil.
  • Continue stirring and cook until sugar is dissolved.
  • Remove from heat and allow to cool.
  • Place meat or poultry in a gallon size sip lock bag.
  • Pour cooled brine into bag over the meat.
  • Remove air from bag and seal tightly.
  • Place the bag of meat and brine in a pan and refrigerate using the following times:

  • 3-4 hours for 3 pounds meat
  • 5-6 hours for a whole chicken
  • 12-24 hours for a turkey, depending on the size of the turkey

  • Pour out the bring and pat the meat dry with paper towels.
  • Now you're ready to cook your meat.
