Use heavy-bottom pans and skillets, such cast iron, because gas produces pinpoint heat, not the wide-spread effect of electric coils. Thin-bottom pans cooking dense food will tend to burn if not stirred often. A diffuser will help, but the better solution long term is Cuisinart or other cast iron, or Le Creuset, or any of the older cast iron pots and skillets. Learn to move pots from high heat to low.
They can be more energy efficient and also you have the choice of two sources of heat. Certain foods taste better cooked by gas and vice versa. Duel fuel gives you more choice.
