Food Expeditor *Expo* has a lot of responsibilities. For starters, Expos are given a lot of authority which is why you cannot be a timid person for this position.
You are the communicator between the front of the house, the wait staff, possibly the bar and the kitchen. If and when there are questions or concerns about orders, you are the first person the servers will come to.
If There are questions your do not know, you then talk to the kitchen manager or chef to find the answer. It's always important that the Expo does the communication because the job can be hectic. On busy nights, you don't want severs talking to kitchen staff because it can cause serious confusion.
Aside from the communication, your biggest job is to tray the food in order as they are printed out on the ticket. This is how the servers remembers what dish goes where and makes it a lot easier on Expos so you are not accidentally placing the wrong orders on different tickets. Normally, there is a lot of food in the window and can be very overwhelming. It's important to keep the tickets in order as they are printed out because it help limits these accidents.
Since you are the person who OK's the food to be sold, you have to make sure it's presentable. Wiping plates and garnishing is a very common role for Expos. You want the food to go out perfectly so the servers aren't running back and forth from the dinning room to the kitchen because food was sold wrongly.
Ultimately, you have the authority to say something does not look right and can have it remade if you feel that you cannot sale the food. You're constantly checking ticket times to make sure they are not over 10 - 15 minutes and can be reminders to the cooks to see if they have started making certain dishes.
Depending on the restaurant, there might be other responsibilities for Expos such as preparing to go orders, pouring soups and portioning food. It depends on the establishment.
Again, it's a high demanding and authoritative position. It seems very overwhelming to start off but you pick up quickly on how to make your job easier.
