I find the best way to respond is to say, politely but firmly, that I am an atheist. Most evangelists are confident about their message as long as you believe at least the core message - they can quote the Bible, tell you how much Jesus loves you, or warn you of the hellfire. But an atheist is immune to all this, because you don't have to believe it. The evangelist has no response, and will probably mutter something about praying for your soul and be on his or her way.
