Basic Pickled Sausage and Onions
This recipe is good for bologna, polish sausage, smoked sausage or any kind of cooked sausage.
You will need:
1 quart jar
Sausage, your choice of
Onions, sliced
Brine:
1/2 cup sugar
3/4 cup white vinegar
1 1/4 cup water
Mix all ingredients and stir until sugar is dissolved. Brine will be strong, but will tone down when it is absorbed into the sausage and onions.
Procedure:
- Peel off skin if needed.
- Slice the sausage into 1/4" to 1/2" thick slices.
- Layer sausage in bottom of jar.
- Layer sliced onions on top of sausage.
- Continue layering until jar is filled.
- Pour brine into jar to completely cover sausage and onion layers.
- Place lid on jar and refrigerate at least 24 hours before serving.
