One might be the history of inventions in the Middle Ages. One of these was the horse collar, another was the stirrup, another was rag content paper, which was necessary for the printing press, and, actually the printing press itself was another. Another that I am particularly fond of is the invention of the chimney, which allowed people to have true fireplaces for the first time.
You might add ideas that were developed elsewhere and brought to Europe during that time. One of these was an improved loom, which made it possible to get inexpensive linen. Another was the wheel barrow.
Another thing you might do is to trace the history of schools opened during the Middle Ages. Wikipedia has a nice list of the oldest schools that still date from that time, I am providing a link below. Or you could work on universities, and there is a link to that below, too. There are about seventy of each.
Tracing the history of architecture is a good thing to work on. Just the arch used in architecture could be fascinating to trace through this period.

It is a 1000 years of history and our world is based on their world. Many cities today still have the street names given to them in the middle ages, our languages, customs, and traditions come from the middle ages. A good example of this is Christmas. It was known as "Christ Mass" and was 4 masses with a dinner in the evening. This has grown and developed into what we know today. There are many other things just like this that come to us from the middle ages. History is connected and just not bits and pieces of time. Those connections determine what we do and how we think today.
