My kids hate veggies, so I very finely grate carrot and zucchini and add to the sauce in spaghetti bolognese, in taco mince, lasagne, casseroles etc.
Alternatively you can cook, carrots, zucchini, mushrooms, pumpkin - whatever you like and puree it and add it to anything saucy or casseroles. They have no idea it's there because they can't see it. The reality is that vegetables are nice - it's the look that kids don't like, therefore they make themselves not like the taste!
