Cut this poor guy some slack. Clearing of the throat is done by many people and often it's a sign of being nervous. Just be yourself, and if he's shy you do the talking for a bit and then ask him what he's interested in. Don't judge him too quickly or you could miss out on a good guy. By the way, think of what YOU do when you are nervous! Bite your nails, your stomach rumbles, play with your hair, blink too much, rub your tongue repeatedly over your lips, etc.
