When jousts were held as trials of martial strength and ability, no being a jouster was not a job. The actual job was a knight, who would use a joust to both prove his skill with a lance as well as win accolades and settle fueds. Currently, there may be some people whose official job title is "jouster"; these would likely be individuals who are involved with the tourism industry around castles and other significant historical structures from medieval Europe.
The only Jarrod Listiak I know of is a professional entertainer and has done a lot of work as a jouster.

When he was a young man Henry was a great dancer, musician & composer. He was also great at sports (he invented a new sport that was similar to tennis). He also enjoyed hunting and was a fantastic jouster. But as he grew older, he put on more weight and couldn't carry on with most of these things.
