None and all. Beef cattle were (and are) the main type or class of cattle that cowboys handle and work with on a daily basis. Horses were the animals they used to herd and work with such large, horned ungulates.
Most learned the hard way, through trial and error, but others had mentors that taught them how to know the behaviour of cattle and how to raise and herd them.
Cowboys used a lariat or riatta (the riatta is longer than a lariat) to catch cattle with. They also built pens out of trees or rope, or used natural barriers like box canyons to herd cattle into to sort them and work them to brand and castrate them. Today's cowboys still use the lariat or riatta to catch and treat cattle with, and use steel panels, board fences and the like to herd them into to work them such as during branding time.
On a cattle drive, the scout played a crucial role by leading the herd and ensuring the path was safe. They identified potential hazards, such as rough terrain or predators, and communicated with the rest of the cowboys to navigate effectively. Scouts also often sought out water sources and grazing areas for the cattle, helping to maintain the health of the herd during the journey. Their keen observation skills and local knowledge were vital for the success of the drive.
