A pungent smell is a strong, sharp or slightly irritating odour that you notice easily. Mustard is a common example. In mustard seeds, sinigrin and the enzyme myrosinase naturally occur. When the seeds are crushed and moisture is present, they can contribute to the formation of allyl isothiocyanate (AITC), which is a major contributor to mustard’s characteristic pungency and sharp aroma. The important point is that strong smell or pungency does not necessarily mean better quality or purity. Its intensity can vary with the mustard variety, seed condition and processing method. This is something I have also observed while working with mustard oil at Pure Tatva. A milder-smelling mustard oil is not automatically impure or adulterated.
