A feast day is that date assigned by the Church when each particular saint is memorialized at Mass. Keep in mind that there are more than 10,000 named saints and only 365 days each year. That means on any given day a number of saints share the date. Sometimes the date corresponds to the date the saint died and was reborn into heaven. Sometimes it is the date the saint converted to Catholicism. Some times the date has no special significance for that specific saint.

No. There are thousands of saints, so it would be impossible for every single one of them to have their own feast day (unless we decided to devote each day of the calendar to several different saints).
