Curry is actually a combination of spices, and that combination changes on the region and local flavor of that region. You could have red curry, brown curry, or yellow depending on the ingredients mixed... Cumin is a good substitute overall tho.

Definition of curry powder?

Curry powder is a mixture of spices that is coloured yellow. Contrary to what many people think, it is not a common component in certain cuisine. Curry powder was developed by the British to simulate the flavour of Indian cuisine; it is not a component of real Indian cuisine. The phrase "curry," which describes a common Indian cuisine that is made up of a sauce or gravy and meat, rather than the spice mixture, may be the source of confusion.

Which country gave us the word curry?

The word curry came from the Tamil word "kari," meaning sauce. The Tamil language was spoken by peoples of southern India and North-east Sri Lanka. The word was anglicised after members of the British East India Company, trading with Tamil merchants, sampled dishes made with a spice blend used for "kari" dishes. The spice blend was called "kari Podi" or curry powder. The British called the Indian spice "curry."

I love the taste of curry but I cannot stand pepper of any kind there MUST be some Indian food that doesn't burn my hypersensitive mouth but can I find a recipe?

Make a curry froma mild recipe such as a korma, but find one that doesn't use spice mixes such as curry powder. Miss out any chillies or chilli powder, and the curry will taste just the same, except not spicy!
