Shrimp Fried Rice for Two

2 cups cooked rice that has been cooled completely, better if it is a day old. This makes the rice less sticky.

1 clove crushed or chopped garlic (don't be afraid to use more if you like garlic).

1 cup shelled, deveined shrimp (sprinkle a pinch of salt and sugar and set aside).

1 egg (whole or beaten - I prefer whole).

1 tablespoon oil

1/2 teaspoon sesame oil (optional)

1 1/2 teaspoon light soya sauce (preferable but not critical to recipe)

1 stalk green onion (cut into small 1/4 inch pieces).

Salt and WHITE pepper.

Heat pan till almost smoking, add oil. When oil is hot, add garlic and saute for about 45 secs., push to side.

Add egg, if using whole add 1/2 teaspoon soya sauce and break egg up lightly. Let it cook 3/4 ways. Push to side.

Add shrimp and saute till almost pink, bring garlic and egg back, combine wit shrimp. Saute another 1 min.

Add rice, pepper, salt (and soya sauce if using) combine well with shrimp etc. Add sesame oil if using.

Fry over high heat for about 3 to 5 minutes (let rice sit and get a little over browned but not quite burnt after each turn - this give the famous "wok hei" that all good Chinese cooks swear by. You can tell it by the fragrance of the food).

Turn off heat, add in green onion and serve while still piping hot.

P.S. If you would like to, you can add some petite frozen green peas. Cook peas according to package instruction and leave to drain before you start cooking your rice and add to pan at the same time as green onion. That will take care of the veggie factor.
