A vessel with multiple levels in the holds. You can load (for example) cars and machinery in the tank top (lowest hold) and then close that. Once closed, you can load crates and boxes into the "lower tween" hold, then close that. The remaining "upper tween" once filled is closed up and sealed for sea. If there is additional cargo it can be loaded on deck.
A non-tween decker has no levels in the holds.

I'm afraid I don't have the exact definition in front of me, but deck edge immersion is roughly the point at which a vessel has rolled or listed to a certain degree where there is not a sufficient amount of righting arm, or opposing force to right the vessel, and water passes the deck edge (main deck) and the vessel continues to roll and capsize.

It is usually the rear raised portion of the deck on a sailing vessel
Passengers on the Mayflower slept on what was called the Gun Deck or 'tween Deck. It was the deck between the upper deck (top of the ship) and the bottom deck (where the cargo hold was), hence the name 'tween deck. The Gun Deck was only about 5.5 feet high, 80 feet long and 24 feet wide, which isn't a lot of room for 102 passengers. Some of the floor space would have been used by ropes, cannons etc so not all the space was available for the passengers. The link below has a great diagram of the Mayflower. It gives you an idea of how cramped the quarters must have been.
