If you are a University professor, then you may be teaching classes, or doing field trips with your class. University professor also commonly write publications and preform studies to, so you may be doing field work. If you work at a museum, then you may be cataloguing specimens, or possibly preperation work (Removing the matrix around the fossil).
Paleontologists do both office work, and field work!
