Birds use their beaks to peck, their wings to confuse, their feet to claw or grab their opponents. However, usually their opponents are either other birds or very large creatures. The former they can fight against but the latter there isn't much defense. An alligator can, in one bite, grab and swallow a bird whole - as can whale sharks, and other large predators of the deep. Although many birds live their whole lives without having to really fight an opponent - millions do fight every year for nesting places, with whom they will have young, and those smaller vermin that attempt to either eat their eggs or their young.

Some birds also use camouflage to defend themselves. For instance, new born quail look just like the reeds where they are nested. This helps to keep most predators away from the young. The female quail will also do a broken wing routine to try to distract a predator from the chicks. So there are a lot of ways in which a bird can defend itself and these are only a few examples.
