An enchilada is a Mexican dish. It is a corn tortilla dipped in sauce, filled with cheese or meat and cheese and rolled up. Usually served in two or three to a plate and then covered with a Chile sauce. Beans, rice, and a lettuce/tomato salad are usually served on the side.
