Physical appearance. All desi cows of India are of the subspecies Bos primigenius indicus and are designated as desi cows by the presence of the hump over the shoulders, large ears and loose skin. Desi is not a breed, but merely a name for all Indian cows that are valued and considered "sacred" under Hindu religion, one because of their looks, and two because they originate from India itself, unlike Jersey cattle. Desi breeds include Ongole, Devani, Gaulau, Sindhi, Tharparket, and others.
The Jersey cow, on the other hand, is a specific breed belonging to the subspecies Bos primigenius taurus. It wouldn't be considered a desi cow because it does not have the same physical characteristics desi cows share as mentioned above.
