Dual wielding is better left to Frost Spec where there are actually talents that will help it. Most two hander's stats (strength, stamina, agility) are better than two one-handers. Remember, most of an Unholy DK's damage is gonna be shadow damage (although you do NOT use spellpower items) and this is gonna be built off of strength and stamina.

First, you have to be an Unholy Death Knight, and take the talent that allows it. Then all you have to do is use death coil to either damage a mob, or heal your ghoul with it. That applies the buff to your ghoul for 30 seconds, and will stack up to 5 times.
Plague Strike > Icy Touch > Blood Strike > Blood Strike > Plague Strike ...then your runic power dump. I dump a Death Coil first and then in my second rotation pop gargoyle since the rotation runs a lot smoother with death runes up.
