Blackened is a cooking method used for many fishes. It is generally considered to be cajun or creole styles of cooking. Basically you heat up a cast iron skillet extremely hot, with no oil. Some people let the skillet get red hot. You take a fish fillet or fish steak and put seasoning (usaually a cajun seasoning mix)on both sides, then put it in the pan to sear. You turn it once and try to blacken both sides. This chars the fish on the outside, but leaves the middle moist. It is a popular way to prepare Redfish, Tuna, and Swordfish to name a few.
