The atoms in the matter change their position. Any matter can be in four physical stages. Matter can be solid, which requires the lowest temperature, when heaten up, the material melts and changes its appearance to liquid. When heaten up again the liquid vaporizes and become gas and when heaten up even more at some point the gas become plasma. Plasma is the form of the hottest the matter can get, and plasma is found inside stars and such.

When a matter changes its physical form from more solid towards less solid the atoms in which it is built start to move faster and faster thus changing the form of the matter. The atoms of solid matter are quite still, only minor movement happens, which a human eye cannot normally see. When melting, the atoms move more irrationally and the matter melts to liquid. When vaporizing the atoms move so quickly that the matter is in gas state and in plasma the atoms move furiously everywhere.
