A cook chill food product is something that has already been cooked and all that is needed to make it ediable is for it to be heated up. For example, in tesco and many other stores there are ready meals which you put in the micro-wave. That is a cook chill product. Something that has been cooked then freezed/ cooled very quickly.
There are so many different types of production process. However, the main ones are only three namely batch production, job production and flow production.
Clean, Separate, Cook, Chill. Clean hands and surfaces often. Separate raw meats from foods that are not cooked before eating. Cook foods to proper temperatures. Chill foods by refrigerating promptly.

A disadvantage is the need to reheat the food. An advantage to a commissary is that it allows you to pick up a prepared meal and then take it home, to a meeting, or even a picnic. The disadvantage to this is that you cannot eat your food right away, you have to travel with it. Assembly food service brings pre-cooked food to you. An advantage is that this allows you to feed large groups of people without having to cook the food yourself. A disadvantage is the need to re-heat the food.
