The default music player for Ubuntu 10.10 (Maverick Meerkat), is Rhythmbox, but that has been replaced in favor of Banshee since version 11.04 (Natty Narwhal).

if the music is on windows media player or something like that, send it to documents. then, when you are in documents, right click on the file and choose "open with" and pick itunes. or, if itunes is your default music player, just double click the file and it should open in itunes.
The best way to not have the default background is to have the music tagged correctly with the appropriate albums attached so the player will show the album and artwork for the music playing rather than the generic background for the program.
