Broadly speaking, Wine is made from the juice of grapes and yeast. The yeast converts the grape sugar to alcohol, giving off carbon dioxide, and therefore produces the wine. Whilst this recipe will produce wine, to produce premium (& consistent) wines things tend to get a little more complex. Vigneron's would often add additional ingredients such as sulphur and yeast nutrient. They might also control fermentation temperature, which strains of yeast they use, exposure to oxygen, skin contact, stem contact, the way in which the wine is aged, what it is aged in, etc, etc, etc...
They have not been refined using isinglass (fish scales.) Many wines also use gelatin or egg whites for fining/filtering purposes, meaning not all wines are vegan.
I don't believe grapes alone are not healthy for you to consume but rather the products they use to treat grapes. I have also been told that grapes can be poisonous to dogs.

You would use fairly tart grapes to make your dry wine.

There are different types of sweet wines. Ice wine and mascotto or muscat are 2 types of dessert wines. Ice wine is mostly from Canada and northern part of Main. Muscatto or muscat can come from all over the world. A German Riesling can depend on the wine maker and when the grapes where picked as to how sweet it will be. In my oppinon thoes or the best sweet white wines. There are sweet reds too.

A vintage wine is one where all the grapes crushed to go into that wine come from one single season. A vintage wine is indicated by the year being quoted on the label ( i.e "2012" ). The alternative is a "Non-Vintage" (NV) wine where the base wine from many different vintages is blended to produce the ideal wine. Wines that use this technique include many Sparkling and Fortified wines.
