It is called Blocking. This same term is used in Opera, theater, film or Ballet. Technique and way of doing it mostly depends on director, but in general each scene is divided into smaller parts. In order to make work on blocking simpler for both actors and director, stage has four areas: upstage, downstage, stage left, stage right.
