Calling a woman 'mam' is generally a sign of respect or etiquette for either an elder or one in a higher position or rank than yourself, such as a superior officer in the army.
The word "mam" does not seem to exist in the English language. If you are referring to the word ma'am (as in Yes ma'am), it is simply a shortened version of the word "madam".
