Turmeric and zedoary are both obtained from the curcuma longa and curcuma zedoaria plants of Asia. Zedoary is obtained from the crushed dried roots and used as a condiment,in cosmetics, in perfume, and as a stimulant medicinally. Turmeric is also derived from dried rhizomes and used as a condiment spice and dye. They are not usually used as a raw or boiled vegetable in Europe as far as I am aware. Raw is best, curcumin is unstable at high temperatures.
