Merge and center takes several cells that are beside each other and merges them into one large cell. The contents of this new cell will be centred. It can be used to put one large heading over a group of columns, to act as a main heading for those figures. So, for example, you could have 12 columns with sales for each of the 12 months for different products. In the cell above January you could put the heading Annual Sales. Then you could select it and the next 11 cells beside it, so that all 12 cells above the 12 monthly headings are selected. You could then do a merge and center and it would make one large cell with the heading in the middle of it.

Highlight the cells you want to merge and click the Merge & Center button. In Excel 2007, the button is located on the Home ribbon in the Alignment section.
