Professions are skills that the player can learn and level to either gather materials or craft items. They are divided into Primary and Secondary Professions.
Primary: Can only have two Primary Professions per character
Secondary: Can have all of the secondary professions
Through the Mining and Skinning profession's.
You can get easy gold on WoW through the Mining and Skinning profession's.
If you have the profession "Leather Working" you can use it to make items, item enchantments and other stuff.
The quickest way to get gold in WoW is through the Mining and Skinning profession's.
Herbalism can be combined with Alchemy to make potions, or Inscription to make glyphs and scrolls. If you are only interested in money you can have skinning or mining as your second profession and sell the proceeds.
A complimentary profession to skinning would be leatherworking. This way you can make armor from the skins that you collect with skinning. Of course you could choose to take another gathering profession and have a dual gatherer. This would be beneficial in that you gather resources for you other toons professions.

Hunters do not have any class abilities that unlock anything. If they have the blacksmithing profession, then they can unlock boxes and doors. Same goes for engineering.
Staffs can be gotten as rewards for doing quests and are dropped off of mobs. Staffs are one of the only weapons that can not be made by a profession (along with bows and crossbows).
Glyphs can be made if you have the Inscription profession. To make glyphs you will need to either buy herbs off of the AH or have the herbalism profession (Allows you to pick you own herbs). Once you have the profession, you open up the Inscription UI and click what you want to make. If you have the materials, then the UI will make it and place it in your bags.

Every profession is good on WoW. Just ask around which profession is in more demand. It varies from population from server to server. Some people are enchanters and tailors. They use tailoring to make BoE items for people as well as the spellthread for their pants. And enchanting, you can personally enchant your things without having to buy mats and give tips out. And everyone will ALWAYS need enchanters and jewelcrafters. So it's basically your choice on how you want to use it and what you want to expect out of the profession.
