If you are referring to what chefs and food preparers shout in kitchens, it is a courtesy warning to other people that a hot dish or hot food is being moved behind them. For example, if moving a large pot of soupor a large roast from one area of a kitchen to another, yelling "hot" would let everyone know that you were carrying something hot and/or heavy and/or easily spilled so that they don't move unexpectedly in front of you while you are transporting that large, heavy, hot dish.
If someone were to back into you or bump you, you would either spill or drop the heavy dish or would spill some or all of it on them or yourself, making it unservable and a waste of time, expense and food for the restaurant.
