"Jai" refers to vegetarian food that is popular (but not unique to) among Chinese Buddhists. A lot of jai can be flavoured and textured to resemble meat (e.g. roasted pork, chicken, and even fish) while having no meat-based ingredients. Soy/tofu, wheat gluten, fungi, and vegetables are common ingredients when making jai.
