It really depends on what kind of cheese.

Cheese curds, fresh from the dairy can be still warm when eaten, while fine aged cheeses like Parmesan or fine old Canadian Cheddar can be as much as 8 years old or older.

Well there is diffrent time limits to difrent cheeses like some you can age for threee hundredd years . talk about old . if you are intrested in cheese aging Google how you can do it and you could make a fortion the oldre the cheese the more money youl get.

Normally cheese is aged in a controlled envoriment. In most cases bacteria is sprayed onto the cheese which allows for aging and gives the cheese its flavor (i.e. parmasean)
