If you want to keep them fresh for a long time then you could chop the vegetable (so its easier when you come to cooking it) and a bit of salt and just marinate the salt in the chopped vegetable then just place the vegetables in sandiwch bags; or bags which can be eaily resealed again and stay resealed tight. Then place the tightly-resealed bag in the freezer and this will keep your vegetables fresh.

Upon cooking, just let the vegetables fully defrost and just give them a good wash to get rid of the salt.

Also, you can put vegetables into a freezer bag, squeeze out the air and seal tightly, and keep in your fridge's vegetable crisper. Never wash the vegetables before storing this way; wait until you are ready to use them before washing. This is an effective storage method for everything from peppers and celery to onions and potatoes.

Foods which will react with plastic and deteriorate fast, such as chillies, ginger and garlic can be kept in paper bags in the fridge. This is a great way to store chillies because if they aren't used for a while they will simply gradually dry out, remaining always useable since the only difference between fresh and dried chillies is they become hotter as they dry.

I'm not sure why you'd use water to keep vegetables fresh, except for foods such as asparagus, which can be kept refrigerated in a glass with a little water, or fresh herbs, which might be kept in the same way. Otherwise, vegetables kept in water will rapidly deteriorate.

Tomatoes shouldn't be kept in the fridge; they're best stored uncovered on the benchtop as you would keep other fruit. They'll lose their flavour if allowed to become cold.

As with all foods, just buy what you need and use it soon; this solves most storage problems. Buying heaps of fresh produce on special isn't saving you a cent if you end up throwing most of it out.
