There are billions of stars. On a clear night, in good viewing conditions, you can see thousands, but there are many more than that in space. All the ones we see are just in our galaxy and there are billions of other galaxies.
Matariki is the same as the Pleiades star cluster. Note that it isn't really 7 stars; the Pleiades include hundreds of stars; with the naked eye, you may be able to see 6, or 9, depending on how good the viewing conditions (and your eyesight) are.
Anywhere away from large towns and cities are good for viewing stars, because there is less light pollution. That is one reason. The atmosphere is thinner on high mountains, which is another good reason for being able to see stars clearer.
