The best defense is to have objective evidence of the truth of the matter. This can be a third party witness who was there, information recorded shortly afterward.

However, that kind of evidence is rarely available. The next best approach is to attack their credibility by exposing their motive for lying.

Try and stay calm when you refute their testimony. Don't get mad. Don't call them names. Don't call them a liar. The jury determines who they trust and angry people don't convince people. You need to be the reliable, trustworthy party and make it easy for the judge or jury to believe you. That also means not shading the truth.

You (or your lawyer) can attempt to impeach them on cross examination in an attempt to show that they are lying.
