Depends on if you want it tethered or untethered. (Tethered means that when you shut down, it will boot up to the original Apple software. Untethered is permanent unless you reset the iPod)
I recommend Greenpois0n (with a zero for the second O) for untethered and Redsn0w for tethered. Both are trusted jailbreaks that are nearly always successful.

∙ 9y agoJailbreaking an iDevice not only matters the generation, but more importantly wish version iOS your device has. FOr a 3rd Gen iPod Touch, the iOS is from 4.2.1 to 5.1.1 and all iOS firmwares in that range are jailbreakable. It all is user preference on which you would wish to use. Just make sure the jailbreaking software matches the version iOS you are trying to jailbreak.
