It really depends: on your slayer level; on your combat level; and on your preferences. Some of the masters will give you easier slaying tasks, some will give you more difficult slaying tasks. Once you have the appropriate level, a higher-level monster is more likely to give you the higher-level clue scrolls (if you are interested in those).

However, you can't change an assignment you get from the Burthorpe master. Example: Vannaka gives you a task of 10 Green Dragons. Should you not want to complete this task you could go to the slayer master in Burthorpe and he will give you a new assignment. The kicker is that you must complete the task he gives you. If you do not like it, you cannot change it. You cannot go back to Vannaka or any other slayer master to try again. If, in Burthorpe, Turael assigns you 30 crawling hands then you must kill 30 crawling hands to get a new slayer task, regardless of your slayer level.
