Rinse bird under cold tap.

Put it on a baking tray, brush over with a little cooking oil, cover with a couple of

rashers of bacon, and cook in the oven (mark 6) until golden brown. (About 50 minutes).

One per person.

If you want the hassle of making a marinade and serving with a cream sauce, that's up to you. that part of the recipe is not here.... because I'm eating my Poussin.

Lift the head up and stick the knife into the right side of the neck. Slowly bring the knife across the neck, there will be a good amount of blood but once you get past the gag reflex it'll be fine
