There are certain types of fish and insects that can only be caught in winter such as the dung beetle (you see them pushing snowballs around) and the stringfish (found in rivers worth 15,000 bells!).
You can also build snowmen from snowballs that you see lying around (takes two correctly proportioned snowballs to make a snowman) and if you make an attractive enough one, you'll get a letter the next day in the mail with a piece of the "snowman set" of furniture.
There's also several holidays. From a fish catching, insect-seeking point of view though... winter is a bit of a down time in the game. (It's a good time to work towards your town's perfect rating cause there's not much to do besides plants trees and water flowers.)
