The Canon of the Mass is the fundamental part of the Mass beginning with the Te igitur after the Sanctus and ending with the Great Amen before the Pater noster. It's form is fixed, except for the prayers Communicantes and Hanc ignitur [note: in the post Vatican II Mass, there are four canons available for the priest to choose from].

I do not believe that Canon Law forbids it; however, pious Catholics would object to the gifts being presented at Mass for consecration to be presented by a non-Catholic (who knows what they believe).
