It may be just that--a partially digested carrot. Sometimes food passes through the stomach and intestines and out with your bowel movement without fully breaking down. It is a normal condition and it is perfectly normal to see chunks of visible food in the stool occasionally.
However of course, if you see a large amount of chunks of food and it does not appear food is digesting properly, or it increases in frequency, see your doctor to ensure proper bowel function.
