The color inside an avocado seed is pretty much the same as it is on the outside. It varies a bit depending on what "stage" the seed is in. Let's look at the "endpoints" and then you may be able to see how it changes. As the seed develops, it changes from white to the yellowish orange color you see when the seed actually sprouts. So whatever color range leads from white to yellow-orange is what happens here.
