The white outside rind of the soft cheese, Brie, is an edible mold; many people enjoy the flavor of the rind and consider it an essential part of the cheese. Those who don't care for the taste or texture of the mold simply cut it off and just eat the cheese itself, also called the patê.

It's an edible mold that grows naturally on the cheese. I never remove it but some people do; it can safely be eaten and actually enhances the flavors of the cheese.
