The simple answer: there is none. These are simply two aliases/personae/alter egos/pseudonyms that Marshall Bruce Mathers III (Eminɘm's real name) created for his rapping career.

I believe Eminɘm was the name that he used first of those two because as a child he first used the spelling "M&M" when performing amateur raps at age 14 in Detroit, Michigan but later changed this to "Eminɘm" as he went professional. (This name obviously comming from a combination of his initials "M" for Marshall and Mathers).

However, some believe most of Eminɘm's darker and more cartoonish songs are considered "Slim Shady songs," while his deeper and more personal songs are considered plain "Eminɘm songs" or "Marshall Mathers songs." This does seem to work very well by looking at the lyrics of the songs, as to whether Marshall refers to himself as Slim or not. Here is an example: the song 'When I'm Gone' is a deep meaningful song and so would assume it is considered an Eminɘm rather than a shady song and Marshall confirms this in the lyrics. At the end of the first verse, right before the first chorus, Marshall sings "That's Slim Shady, yeah baby Slim Shady's crazy. Shady made me. But tonight, Shady's rock-a-bye baby".

One other example but comparing two different songs is: "Same Song & Dance" may be considered a Slim Shady song, whilst "Beautiful" would be considered a regular Eminɘm song.
